We are back from our family leave hiatus after welcoming Holden Moon into our lives. We hope you will continue to follow our dinner and movie recommendations as we adjust to feeding one more in the Moon household. This week a conversation in the TGS chat pop culture channel prompted us to watch one of the most underrated films in movie history, Snowpiercer. But first, we made one of our go-to dinners: cajun pasta from Hy-Vee Recipes.
Total Time: 30 minutes
Ingredients:
- 2 tbsp salted butter
- 1 pkg. (12-14 oz.) sausage, bias sliced
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 2 tsp. Cajun season or Ryan’s amount which is lot more
- 2 cups of chicken broth
- 1 (14.5 oz.) can diced tomatoes
- 8 oz. elbow macaroni
- 4 oz. cream cheese, cut into cubes
- Green onions (optional)
Instructions:
- Melt butter in a large stockpot over medium heat. Add sausage, onion, red pepper, and Cajun seasoning; cook 2 to 3 minutes or until vegetables have softened and sausage is blistered. Stir in chicken broth, tomatoes, and macaroni. Cover, bring to a boil; reduce heat. Cook 10 to 12 minutes or until pasta is al dente.
- Add cream cheese cubes to pasta. Stir and cook until melted. Remove from heat. Serve pasta topped with green onions, if desired.

Ryan: Ever since Bong Joon Ho won all the awards for his masterpiece, Parasite, I have been wanting to rewatch his other masterpiece, Snowpiercer. And it was honestly better on the second watch than the first. The movie has a great cast, solid action, and a story and pace you can’t turn away as you may miss an important piece of the story. Even though the movie was filmed in 2013, it could be a metaphor for any time and anywhere in history. Does the movie leave you with more questions than answers and have some weird plot holes, sure. But overall this film is so interesting and brilliant I may have to give the TV show a chance!

Haley: This was my first time watching Snowpiercer, and it’s clearly one of those movies that sticks with you. The concept of the entire remaining population on Earth all existing on a perpetual train is so entirely bizarre that I’ve found myself thinking about it days later still trying to piece together all the symbolism. I enjoyed the story but mostly I was focused on the detailed world-building that was executed undoubtedly thanks to Bong Joon Ho’s brilliant mind. My one complaint, and maybe it’s because I can’t unsee him as Captain America, is that I didn’t love Chris Evans as the lead and think someone more rugged would’ve been more convincing. Tilda Swinton, on the other hand, understood. the. assignment. Overall it was a fascinating movie and it will likely be even better if I watch it a second time and know what to look for.
