We are back with Dinner and a Movie with the Moons! Now that all of us are social distancing at home and the world is absolutely bonkers, we decided we needed some serious comfort food. We also tried to find a movie that not only lined up with our current mental state, but made us laugh and feel better too! So this month we cozied up with some slow cooker white chili and watched 2012.
SLOW COOKER WHITE CHILI
Ingredients:
- 2 chicken breasts
- 2 cans of corn (drained)
- 2 cans of white beans (drained)
- 3 cups chicken broth
- 1 onion (chopped)
- 1 jalapeno (seeds removed, diced)
- 1 can mild diced green chiles (10oz)
- 1 tbs oregano
- 1 tbs cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional: sour cream, tortilla strips, Mexican blend cheese
Instructions:
Put all ingredients into a slow cooker and stir. Cover and cook on high for 4 hours. (Note: We always add more spices than the recipe recommends, so keep that in mind and season to your liking.) When there are 30 minutes left on the timer, remove chicken and shred. Return chicken to the slow cooker for the remaining 30 minutes. Serve with tortilla strips, cheese, and sour cream.

Ryan: If you notice the ratings, this movie wasn’t a must-see when it was released in 2009. But during a global pandemic let’s focus on how it could be worse. 2012 is a movie about the luckiest man in the world (John Cusack) during the unluckiest time in world history. John Cusack’s character, Jackson Curtis, seems to have everything work exactly in his favor during the entire movie, from somehow successfully driving a limo through a collapsing building during a massive earthquake to racing a beater RV from a supervolcano. I would encourage Jackson to immediately buy a lottery ticket if the world wasn’t collapsing. But in all honesty, I was still entertained by this movie. The CGI was incredible, it had laugh-out-loud moments and almost made me cry a few times. I encourage you to open Netflix and forget the current world for two hours.

Haley: Listen, this wasn’t my favorite movie. But given the current state of *gestures to everything* there’s something to be said for watching a movie that makes you think, “Hey, at least I’m not literally getting swallowed by the Earth!” Was there a great storyline? No. But was there entertaining CGI, a star-studded cast, and a vibe that brought me back to a simpler time when all we had to worry about was the Mayan calendar? Yes. So you might as well give it a watch! What else do you have to do?
